Description

Mediterranean Steak Bowls are fresh, vibrant meals combining juicy grilled steak with wholesome grains, crisp vegetables, and creamy sauces for a balanced, protein-packed, and flavorful dish that’s perfect for a quick lunch or dinner.

Ingredients

Steak and Grains

  • 1 lb grilled steak, sliced
  • 2 cups cooked rice or quinoa

Vegetables and Toppings

  • 1 cup cherry tomatoes
  • 1 cucumber, diced
  • ¼ cup olives
  • ¼ cup feta cheese
  • ½ cup hummus

Finishing Touches

  • 2 tbsp olive oil
  • Lemon wedges

Instructions

  1. Cook Grains: Prepare 2 cups of rice or quinoa according to the package instructions until fluffy and tender. Set aside to cool slightly.
  2. Grill or Sear Steak: Cook the steak on a grill or in a hot skillet for about 4-5 minutes per side for medium-rare, or to your preferred doneness. Let it rest, then slice thinly against the grain to ensure tenderness.
  3. Prepare Vegetables: While the steak and grains are cooking, wash and halve the cherry tomatoes, dice the cucumber, and ready the olives and feta cheese for assembly.
  4. Assemble Bowls: Divide the cooked grains evenly among four bowls. Layer with sliced steak, cherry tomatoes, diced cucumber, olives, and crumbled feta on top.
  5. Add Creamy Hummus: Spoon half a cup of hummus into each bowl to add a creamy texture and rich flavor that complements the other ingredients.
  6. Finish with Olive Oil and Lemon: Drizzle 2 tablespoons of olive oil across the bowls, and squeeze fresh lemon wedges over the top to brighten the flavors. Serve immediately.

Notes

  • Swap rice or quinoa for cauliflower rice for a low-carb alternative.
  • Add a handful of chickpeas to your bowl for an extra protein boost.
  • Use skirt steak or flank steak for the best grilling results and tenderness.
  • If you prefer, steak can be seared in a skillet instead of grilled.
  • For more vibrant flavor, marinate steak in olive oil, garlic, and herbs before cooking.
