Ingredients

Roasted Eggplant

  • 2 medium eggplants, cut into cubes
  • 2 tablespoons olive oil (for roasting)
  • Salt and black pepper to taste

Fresh Vegetables and Herbs

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ red bell pepper, diced
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • ¼ cup Kalamata olives

Dressing

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove, minced
  • 1 teaspoon red wine vinegar
  • ½ teaspoon dried oregano
  • Salt and black pepper to taste

Optional

  • ½ cup crumbled feta cheese

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prepare for roasting the eggplant.
  2. Toss Eggplant: In a large bowl, toss the cubed eggplant with 2 tablespoons of olive oil, salt, and black pepper until evenly coated.
  3. Roast Eggplant: Spread the eggplant cubes in a single layer on the prepared baking sheet. Roast for 25 to 30 minutes, turning halfway through, until the eggplant is golden brown and tender. Then allow it to cool slightly.
  4. Prepare Vegetables: While the eggplant roasts, halve the cherry tomatoes, dice the cucumber and red bell pepper, and thinly slice the red onion to get all fresh vegetables ready.
  5. Make Dressing: In a small bowl, whisk together 3 tablespoons of extra virgin olive oil, fresh lemon juice, minced garlic, red wine vinegar, dried oregano, salt, and black pepper to create a bright lemon garlic dressing.
  6. Combine Salad: In a large serving bowl, combine the roasted eggplant, cherry tomatoes, cucumber, bell pepper, red onion, chopped parsley, mint, and Kalamata olives.
  7. Toss with Dressing: Pour the lemon garlic dressing over the salad and gently toss everything together until evenly coated.
  8. Add Cheese and Serve: Sprinkle crumbled feta cheese over the top if using. Serve the salad slightly chilled or at room temperature for the best flavor.

Notes

  • Salt the eggplant lightly and let it rest for 15 minutes before roasting to reduce excess moisture and bitterness.
  • Avoid overcrowding the baking sheet to ensure the eggplant browns properly instead of steaming.
  • For extra protein and fiber, add a cup of rinsed chickpeas to the salad.
  • Substitute goat cheese if you prefer a tangier cheese instead of feta.
  • Fresh basil or cilantro can be used instead of parsley or mint for a different herb flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days to maintain freshness.
