Ingredients

Choux Pastry

  • ½ cup water
  • ½ cup whole milk
  • ½ cup unsalted butter
  • 1 tbsp granulated sugar
  • ¼ tsp salt
  • 1 cup all-purpose flour
  • 4 large eggs, room temperature

Pastry Cream Filling

  • 2 cups whole milk
  • ½ cup granulated sugar
  • 4 egg yolks
  • ¼ cup cornstarch
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract

Glaze & Decoration

  • 1 cup semi-sweet or white chocolate, melted
  • Pink or red food coloring (optional)
  • White chocolate or royal icing (for “letter” details)


Instructions

  1. Prepare Choux Pastry: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. In a saucepan, combine water, milk, butter, sugar, and salt, bringing the mixture to a rolling boil. Add all the flour at once and stir vigorously until the dough forms a smooth ball and pulls away from the sides of the pan. Remove from heat and let cool for 5 minutes.
  2. Incorporate Eggs: Beat the eggs in one at a time into the dough, mixing well after each addition until you achieve a smooth, glossy batter perfect for piping.
  3. Pipe the Pastries: Using a piping bag, pipe envelope or rectangular shapes onto the lined baking sheet, ensuring consistent sizes for even cooking.
  4. Bake the éclairs: Bake for 20 minutes at 400°F, then reduce the heat to 350°F (175°C) and continue baking for another 15-20 minutes until the pastries are puffed and golden brown. Allow them to cool completely before filling.
  5. Make Pastry Cream: Heat the milk in a saucepan until steaming but not boiling. In a separate bowl, whisk together sugar, egg yolks, and cornstarch until smooth. Slowly pour the hot milk into the egg mixture, whisking constantly to temper the eggs. Return the combined mixture to the saucepan and cook over medium heat, stirring continuously until it thickens. Remove from heat, then stir in butter and vanilla extract. Allow to cool completely.
  6. Assemble éclairs: Using a piping tip, fill the cooled éclairs carefully with the chilled pastry cream. Dip the tops of the éclairs into the melted chocolate or glaze. Use white chocolate or royal icing to decorate the tops with ‘letter’ details mimicking a sealed envelope.
  7. Final setting: Place the decorated éclairs in the refrigerator to chill until the glaze is set, typically about 30 minutes, before serving.
