Ingredients
For the Potatoes:
- 3 medium potatoes, diced
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
For the Taco Meat:
- 300 g ground beef or chicken
- 1 tbsp taco seasoning
- 1/4 cup water
For the Toppings:
- 1/2 cup shredded cheese
- 1/2 cup sour cream or yogurt
- 1/2 cup diced tomatoes
- 1/4 cup chopped lettuce
- 1/4 cup corn
- 1/4 cup black beans
- Fresh cilantro (optional)
Instructions
- Preheat Oven: Preheat your oven to 200°C (about 400°F) to ensure it reaches the perfect temperature for roasting the potatoes to a crispy golden finish.
- Prepare Potatoes: In a large bowl, toss the diced potatoes with olive oil, paprika, garlic powder, salt, and black pepper until evenly coated. This seasoning blend will infuse the potatoes with smoky, savory flavors.
- Roast Potatoes: Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the oven for 25–30 minutes, stirring halfway through, until they are crispy on the outside and tender inside.
- Cook Taco Meat: While the potatoes roast, heat a pan over medium heat and cook the ground beef or chicken until browned and fully cooked, breaking it up as it cooks.
- Season Meat: Add the taco seasoning and pour in 1/4 cup of water. Stir to combine, then reduce heat and let it simmer for 3–5 minutes to allow the flavors to meld and the mixture to thicken.
- Assemble Bowls: Once the potatoes and meat are ready, create your bowls by placing the roasted potatoes as the base. Top with the seasoned taco meat, followed by shredded cheese, diced tomatoes, lettuce, corn, and black beans.
- Add Final Toppings: Drizzle sour cream or yogurt over the top and garnish with fresh cilantro if desired. Serve immediately while warm for the best flavor and texture.
Notes
- Swap meat with seasoned beans or lentils for a vegetarian version.
- Add avocado or guacamole for extra creaminess and healthy fats.
- Use sweet potatoes instead of regular potatoes for a sweeter, slightly different flavor profile.
