Description

Lentil and Vegetable Soup is a hearty and nutritious Mediterranean-inspired dish featuring tender lentils, fresh vegetables, and aromatic spices simmered together in a flavorful vegetable broth. This comforting soup is packed with protein and fiber, making it a wholesome meal perfect for any time of year.

Ingredients

Soup Base

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, chopped

Lentils and Broth

  • 1 cup dried lentils, rinsed
  • 1 cup diced tomatoes
  • 4 cups vegetable broth

Seasonings

  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Heat the Olive Oil: In a large pot over medium heat, heat 1 tablespoon of olive oil until shimmering.
  2. Sauté Aromatics and Vegetables: Add the chopped onion, diced carrots, and chopped celery to the pot. Cook, stirring occasionally, until the vegetables soften, about 5-7 minutes.
  3. Add Garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
  4. Add Lentils and Liquids: Add the rinsed lentils, diced tomatoes, and vegetable broth to the pot. Stir in the cumin, paprika, salt, and black pepper to evenly distribute the spices.
  5. Bring to a Boil: Increase the heat to bring the soup to a rolling boil.
  6. Simmer: Reduce the heat to low and let the soup simmer uncovered for 30-35 minutes, or until the lentils are tender and the flavors have melded together.
  7. Finish and Serve: Stir in the optional lemon juice for a bright, fresh flavor adjustment. Serve the soup warm as a comforting and nutritious meal.

Notes

  • This soup can be stored in the refrigerator for up to 4 days and tastes even better the next day after flavors have melded.
  • You can adjust the seasoning to taste, adding more salt or spices as desired.
  • For a creamier texture, blend a portion of the soup and stir it back in.
  • Serve with crusty bread or a side salad for a full meal.
