Loaf
- 1½ cups all-purpose flour
- 2 tsp baking powder
- ¼ tsp salt
- 1 cup plain yogurt
- 1 cup granulated sugar

- 1 cup powdered sugar
- 2 tbsp fresh lemon juice
Instructions
- Preheat and Prepare: Preheat the oven to 350°F (175°C). Grease and line a loaf pan to prevent sticking and ensure easy removal after baking.
- Mix Dry Ingredients: In a bowl, whisk together the all-purpose flour, baking powder, and salt to ensure they are evenly distributed.
- Combine Wet Ingredients: In a separate bowl, whisk together the plain yogurt, granulated sugar, eggs, vegetable oil, lemon zest, fresh lemon juice, and vanilla extract until smooth and well combined.
- Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, gently folding or mixing until just combined to avoid overmixing which can toughen the loaf.
- Pour Batter: Pour the batter evenly into the prepared loaf pan, smoothing the top with a spatula.
- Bake: Bake in the preheated oven for 45–50 minutes, or until a toothpick inserted into the center of the loaf comes out clean, indicating it is fully cooked.
- Cool: Allow the loaf to cool completely in the pan on a wire rack before removing it to ensure it maintains its shape and texture.
- Prepare Glaze: Mix the powdered sugar and fresh lemon juice in a small bowl to form a smooth glaze with a pourable consistency.
- Glaze and Serve: Drizzle the lemon glaze evenly over the cooled loaf. Let it set slightly before slicing and serving.
