Ingredients
Cake
- 2½ cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 1 cup unsalted butter, softened
- 1¾ cups granulated sugar
- 4 large eggs
- Zest of 1 lemon
- Zest of 1 lime
- ½ cup lemon juice
- ¼ cup lime juice
- 1 cup buttermilk
Frosting
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 tbsp lemon juice
- 1 tbsp lime juice
Instructions
- Preheat the Oven: Preheat your oven to 175°C (350°F). Prepare two 9-inch cake pans by greasing and flouring them to prevent sticking.
- Mix Dry Ingredients: In a bowl, whisk together the all-purpose flour, baking powder, and salt until well combined to ensure even distribution of leavening agents.
- Cream Butter and Sugar: Using a mixer, cream the softened butter and granulated sugar together until the mixture becomes light and fluffy, which helps to incorporate air for a tender cake texture.
- Add Eggs: Beat in the eggs one at a time, mixing well after each addition to create a smooth and well-emulsified batter.
- Add Citrus Zests and Juices: Stir in the zest of the lemon and lime, followed by the lemon and lime juices to infuse the batter with fresh citrus flavor.
- Alternate Dry Ingredients and Buttermilk: Gradually add the dry ingredient mixture alternating with buttermilk, starting and ending with the dry ingredients. Mix until just combined to avoid overworking the batter.
- Divide and Bake: Evenly divide the batter between the two prepared cake pans. Bake in the preheated oven for 28–32 minutes or until a toothpick inserted into the center comes out clean.
- Cool Cakes: Remove the cakes from the oven and let them cool completely in the pans before frosting to prevent the frosting from melting.
- Prepare Frosting: Beat together softened butter, powdered sugar, lemon juice, and lime juice until the frosting is smooth and fluffy.
- Assemble Cake: Place one cake layer on a serving plate, spread a layer of frosting on top, then add the second cake layer. Frost the top and sides evenly with the remaining frosting.
