Ingredients

Instructions

  1. Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.
  2. Combine wet ingredients: In a separate bowl, whisk the buttermilk, eggs, melted butter (or vegetable oil), lemon zest, fresh lemon juice, and vanilla extract until smooth and well mixed.
  3. Combine wet and dry: Pour the wet ingredients into the dry ingredients and stir gently just until combined; avoid overmixing to keep batter light and fluffy.
  4. Add blueberries: Carefully fold the fresh or frozen blueberries into the batter to distribute evenly without breaking them.
  5. Prepare skillet: Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil to prevent sticking.
