- 3 cloves garlic, minced
- 1 tsp Italian seasoning

- 1 tsp salt

- 2 tbsp chopped fresh parsley
Instructions
- Preheat: Preheat your grill or oven to 400°F (204°C) to prepare for cooking the foil packets.
- Parboil the Potatoes: Cook the baby potatoes in boiling water for 8 to 10 minutes until they are slightly tender but not fully cooked, then drain and set aside.
- Combine Ingredients: In a large mixing bowl, add the parboiled potatoes, sliced kielbasa, red and yellow bell peppers, and sliced onion.
- Prepare Seasoning Mixture: Stir together melted butter, olive oil, minced garlic, Italian seasoning, smoked paprika, salt, and black pepper until well combined.
- Mix Ingredients: Pour the seasoning mixture over the bowl of vegetables and kielbasa, then toss everything thoroughly to coat evenly.
- Assemble Foil Packets: Divide the mixture evenly among four large sheets of heavy-duty aluminum foil. Fold and seal the packets tightly to enclose the ingredients.
- Cook: Place the foil packets on the grill or in the oven and cook for 18 to 22 minutes until the potatoes are fully tender.
- Serve: Carefully open the hot foil packets to avoid steam burns, garnish with fresh chopped parsley, and serve immediately.
