Description
Key Lime Pie Bites are delicious no-bake mini desserts combining a buttery graham cracker crust with a smooth, tangy key lime and cream cheese filling. These bite-sized treats are perfect for summer parties and easy to prepare ahead of time.
Ingredients
Crust
- 1½ cups graham cracker crumbs
- ⅓ cup unsalted butter, melted
Filling
- 8 oz (225 g) cream cheese, softened
- ½ cup sweetened condensed milk
- ¼ cup key lime juice
- 1 teaspoon lime zest
- 1 cup whipped topping
Instructions
- Prepare the muffin pan: Line a mini muffin pan with paper liners to prevent sticking and make removal easier.
- Make the crust: Combine the graham cracker crumbs and melted butter in a bowl until evenly mixed. Press about 1 tablespoon of this mixture firmly into the bottom of each paper-lined muffin cup, forming an even crust layer.
- Beat cream cheese: In a separate bowl, beat the softened cream cheese until it becomes smooth and creamy, removing lumps.
- Mix filling ingredients: Add sweetened condensed milk, key lime juice, and lime zest to the beaten cream cheese. Mix thoroughly to combine all flavors.
- Fold in whipped topping: Gently fold the whipped topping into the cream cheese mixture to lighten the filling and give it a smooth texture.
- Assemble bites: Spoon the filling evenly over each prepared crust in the mini muffin pan, filling nearly to the top.
- Chill: Refrigerate the assembled bites for at least 3 hours or until the filling is set and firm.
- Garnish and serve: Before serving, garnish each bite with extra lime zest for added flavor and a pop of color.
Notes
- For best flavor, use fresh key lime juice rather than bottled.
- Store the bites refrigerated in an airtight container for up to 3 days to maintain freshness.
