Description
Instant Pot Korean Galbitang is a comforting and traditional Korean beef short rib soup made with tender ribs simmered in a clear, flavorful broth enriched with Korean radish and garlic. This recipe uses an Instant Pot to significantly reduce the cooking time while preserving the rich, deep flavors of the broth, making it easy and quick to prepare a classic dish loved for its warmth and nourishment.
Ingredients
Beef and Broth
- 2 pounds beef short ribs
- 8 cups water
Vegetables and Seasonings
- 1 Korean radish (or daikon), sliced
- 4 cloves garlic, crushed
- 2 green onions, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon sesame oil
Instructions
- Prepare the Ribs: Place the beef short ribs in the Instant Pot and cover them with water. Use the sauté function to bring the water to a boil. Then, drain and rinse the ribs thoroughly to remove any impurities and blood, which will help create a clearer broth.
- Add Fresh Ingredients: Return the rinsed ribs to the Instant Pot and add 8 cups of fresh water. Add the sliced Korean radish and crushed garlic to the pot for flavor.
- Pressure Cook: Seal the lid of the Instant Pot securely and set it to cook on high pressure for 40 minutes. This intensive pressure cooking tenderizes the short ribs and extracts rich flavors into the broth.
- Release Pressure: Once the cooking time is complete, allow the Instant Pot to release pressure naturally for 10 minutes to ensure the meat remains tender and juicy before opening the lid.
- Season the Soup: Open the lid carefully and season the broth with 1 teaspoon of salt, 1/2 teaspoon black pepper, and 1 teaspoon sesame oil. Stir gently to combine all flavors.
- Garnish and Serve: Ladle the soup into bowls and garnish with the chopped green onions. Serve hot, ideally with steamed rice and kimchi on the side.
Notes
- Serve with steamed rice and kimchi to complement the comforting flavors of the soup.
- Skim excess fat from the broth after cooking for a lighter soup.
- Add glass noodles during the last 5 minutes of pressure cooking for additional texture and heartiness if desired.
