Description

A hearty and comforting one-pot meal that combines the rich flavors of chili with creamy macaroni and cheese, made quickly and easily in the Instant Pot. Perfect for busy weeknights, this recipe delivers a satisfying dish packed with ground beef, beans, tomatoes, and cheese.

Ingredients

Meat and Vegetables

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced

Pasta and Liquids

  • 2 cups elbow macaroni
  • 2 cups beef broth

Beans and Tomatoes

  • 1 can diced tomatoes (14.5 oz)
  • 1 can kidney beans, drained (15 oz)

Spices and Seasonings

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Cheese

  • 1½ cups shredded cheddar cheese

Instructions

  1. Brown the Beef and Onion: Set the Instant Pot to sauté mode. Cook the ground beef and diced onion, stirring occasionally, until the beef is browned and onions are soft, about 5 minutes.
  2. Sauté Garlic: Add the minced garlic to the browned beef and onion mixture. Cook for 1 minute until fragrant, stirring frequently to avoid burning.
  3. Add Remaining Ingredients: Stir in the elbow macaroni, beef broth, diced tomatoes, drained kidney beans, chili powder, cumin, salt, and black pepper. Mix well to combine all ingredients evenly.
  4. Pressure Cook: Close the Instant Pot lid securely and set the valve to sealing. Cook on high pressure for 4 minutes using the pressure cook setting.
  5. Quick Release Pressure: Once cooking is complete, carefully perform a quick release by turning the valve to venting to release all steam before opening the lid.
  6. Stir in Cheese: Add the shredded cheddar cheese and stir thoroughly until the cheese is fully melted and the mixture is creamy.
  7. Serve: Serve the chili mac and cheese warm, optionally topped with sour cream, green onions, or crushed tortilla chips for extra flavor and texture.

Notes

  • Add extra cheese for a richer, creamier taste.
  • Top with sour cream, chopped green onions, or crushed tortilla chips for added texture and flavor.
  • For a gluten-free version, substitute elbow macaroni with gluten-free pasta.
