Ingredients
Meat and Vegetables
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
Pasta and Liquids
- 2 cups elbow macaroni
- 2 cups beef broth
Beans and Tomatoes
- 1 can diced tomatoes (14.5 oz)
- 1 can kidney beans, drained (15 oz)
Spices and Seasonings
- 1 tablespoon chili powder
- 1 teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
Cheese
- 1½ cups shredded cheddar cheese
Instructions
- Brown the Beef and Onion: Set the Instant Pot to sauté mode. Cook the ground beef and diced onion, stirring occasionally, until the beef is browned and onions are soft, about 5 minutes.
- Sauté Garlic: Add the minced garlic to the browned beef and onion mixture. Cook for 1 minute until fragrant, stirring frequently to avoid burning.
- Add Remaining Ingredients: Stir in the elbow macaroni, beef broth, diced tomatoes, drained kidney beans, chili powder, cumin, salt, and black pepper. Mix well to combine all ingredients evenly.
- Pressure Cook: Close the Instant Pot lid securely and set the valve to sealing. Cook on high pressure for 4 minutes using the pressure cook setting.
- Quick Release Pressure: Once cooking is complete, carefully perform a quick release by turning the valve to venting to release all steam before opening the lid.
- Stir in Cheese: Add the shredded cheddar cheese and stir thoroughly until the cheese is fully melted and the mixture is creamy.
- Serve: Serve the chili mac and cheese warm, optionally topped with sour cream, green onions, or crushed tortilla chips for extra flavor and texture.
Notes
- Add extra cheese for a richer, creamier taste.
- Top with sour cream, chopped green onions, or crushed tortilla chips for added texture and flavor.
