Instructions
- Prep the chicken: Pat the chicken pieces dry with paper towels to remove moisture. Pound the chicken to an even thickness to ensure uniform cooking and prevent uneven doneness.
- Season well: Generously sprinkle salt, black pepper, and optional garlic powder and paprika on both sides of each chicken piece, coating them evenly to enhance flavor.
- Heat the pan: Place a skillet over medium-high heat and add 1 to 2 tablespoons of olive oil or butter. Allow the fat to heat until shimmering but not smoking.
- Sear the chicken: Add the chicken to the hot skillet in a single layer without overcrowding. Cook undisturbed for 5 to 7 minutes until the surface is golden brown and releases easily from the pan.
- Flip once: Turn the chicken pieces over and cook the other side for another 5 to 7 minutes, until the internal temperature reaches 75°C (165°F) and the chicken is cooked through.
- Check doneness: Use a meat thermometer to verify the internal temperature. Alternatively, cut into the thickest part to ensure juices run clear and meat is opaque.
- Rest: Remove chicken from the pan and let it rest for 5 minutes. This allows juices to redistribute, keeping the meat moist and tender before slicing and serving.
