Ingredients
- 
For the salad:
- 4 cups fresh broccoli florets, chopped into bite-sized pieces
 - 2 Honeycrisp apples, diced
 - ½ cup shredded carrots
 - ½ cup dried cranberries
 - ½ cup sunflower seeds or chopped pecans
 - ½ cup shredded cheddar cheese (optional)
 - ¼ cup red onion, finely diced
 
 - 
For the dressing:
- ½ cup mayonnaise (or Greek yogurt for lighter version)
 - 2 tbsp apple cider vinegar
 - 2 tbsp honey (or maple syrup)
 - Salt and pepper, to taste
 
 
Instructions
- In a large bowl, combine broccoli florets, apples, carrots, cranberries, sunflower seeds, cheddar cheese, and red onion. Mix well.
 - In a small bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth. Adjust seasoning as needed.
 - Pour dressing over the salad and toss until evenly coated.
 - Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
 
Notes
- For a lighter option, use half mayonnaise and half Greek yogurt in the dressing.
