Description

Creamy homemade strawberry ice cream made from fresh strawberries, cream, milk, and vanilla. This simple summer dessert captures the real flavor of ripe strawberries with a smooth, luscious texture, perfect for cooling off on warm days.

Ingredients

Strawberries

  • 500 g fresh strawberries, hulled and chopped
  • 1 tbsp fresh lemon juice
  • 3/4 cup granulated sugar, divided
  • Pinch of salt

Dairy Mixture

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 tsp vanilla extract

Instructions

  1. Prepare Strawberries: In a bowl, combine the chopped strawberries with 1/4 cup sugar and fresh lemon juice. Let the mixture macerate for 20 to 30 minutes to release the juices and soften the berries.
  2. Mash or Blend: After macerating, either mash the strawberries with a fork for a chunkier texture or blend to your preferred smoothness for a silkier ice cream base.
  3. Mix Dairy Ingredients: In a separate bowl, whisk together heavy cream, whole milk, the remaining 1/2 cup sugar, vanilla extract, and a pinch of salt until the sugar fully dissolves.
  4. Combine Strawberry Mixture: Stir the mashed or blended strawberries and their juices into the cream mixture until evenly incorporated.
  5. Chill the Mixture: Cover and refrigerate the mixture for at least 2 hours to ensure it is thoroughly chilled before churning.
  6. Churn the Ice Cream: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  7. Freeze to Firm Up: Transfer the churned ice cream into a freezer-safe container and freeze for 2 to 4 hours, allowing it to solidify completely.
  8. Serve: Before serving, let the ice cream sit at room temperature for 5 to 10 minutes to soften slightly for easier scooping and enhanced creaminess.

Notes

  • For a smoother texture, puree the strawberries completely during the mashing/blending step.
  • To enjoy strawberry pieces throughout, reserve some chopped berries and fold them in after churning.
  • Use very ripe strawberries for the best natural sweetness and flavor.
  • If you do not have an ice cream maker, freeze the mixture in a shallow container and stir vigorously every 30 to 45 minutes until the ice cream is frozen.
