Ingredients
Dough Ingredients
- 3 cups all-purpose flour
- 1 packet active dry yeast (about 2 1/4 teaspoons)
- 1 cup warm water (around 110°F/43°C)
- 2 tablespoons sugar
- 1/4 cup olive oil
- 1/2 teaspoon salt
Filling and Topping
- 1/2 cup jam (any flavor, preferably thick)
- Extra granulated sugar for topping
Instructions
- Activate Yeast: In a small bowl, dissolve the active dry yeast and 2 tablespoons of sugar in 1 cup of warm water. Let it sit for 5 minutes until it becomes frothy, indicating the yeast is activated.
- Prepare Dough: In a large mixing bowl, combine the flour and salt. Add the yeast mixture and olive oil to the flour. Stir and mix until a soft dough forms.
- Knead the Dough: Transfer the dough to a lightly floured surface and knead it for about 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 6-7 minutes.
- First Rise: Place the dough in a greased bowl, cover it with a clean cloth or plastic wrap, and let it rise in a warm place for about 1 hour or until it doubles in size.
- Shape and Fill: Grease a baking pan (about 9×13 inches). Press the risen dough evenly into the pan. Spoon the jam evenly over the surface of the dough, then gently press it into the dough with the back of the spoon or your fingers to incorporate the filling slightly without mixing it completely.
- Second Rise: Cover the pan loosely and allow the dough to rise again for 20 minutes. This will help the focaccia become light and airy.
- Bake: Preheat your oven to 190°C (375°F). Bake the focaccia for 20 to 25 minutes until the crust is golden brown and the jam filling looks set.
- Add Sugar Topping: Remove the focaccia from the oven and while it’s still warm, sprinkle granulated sugar generously over the top to mimic the sugary coating of a jam donut.
- Serve: Let the focaccia cool slightly before slicing into 8 pieces. Best enjoyed fresh for a soft and sweet treat.
Notes
- Using a thick jam helps prevent excess moisture that could make the focaccia soggy.
- For extra sweetness and a more donut-like appearance, dust the focaccia with powdered sugar instead of granulated sugar.
- This sweet focaccia is best served fresh to enjoy its soft texture and contrasting jam flavors.
- Use any flavor of jam to customize the taste to your preference.
