Description
A rich and creamy homemade version of the classic cream of mushroom soup, perfect for serving as a comforting bowl on its own or as a flavorful base for casseroles and other dishes.
Ingredients
Mushroom Soup Ingredients
- 2 cups mushrooms, sliced
- 2 tbsp butter
- 2 tbsp flour
- 2 cups broth (vegetable or chicken)
- 1 cup milk or cream
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 clove garlic, minced
Instructions
- Sauté Mushrooms: Melt butter in a saucepan over medium heat. Add the sliced mushrooms and sauté until they are soft and golden brown, about 5-7 minutes.
- Add Garlic: Stir in the minced garlic and cook for an additional 1 minute until fragrant, being careful not to burn it.
- Make Roux: Sprinkle the flour over the mushrooms and garlic, stirring continuously for about 1 minute to form a roux and cook out the raw flour taste.
- Add Broth: Gradually whisk in the broth, stirring constantly to combine the roux and broth smoothly without lumps.
- Add Milk or Cream and Simmer: Pour in the milk or cream and continue to cook the mixture over medium heat, stirring frequently until the soup thickens, approximately 5-7 minutes.
- Season: Season the soup with salt and black pepper to taste. Stir well to incorporate the seasonings.
- Serve: Serve the soup warm as a comforting dish or use it as a rich base in casseroles and other recipes.
Notes
- For a smoother soup, blend the mixture with an immersion blender or regular blender before serving.
- This soup makes an excellent base for casseroles or creamy pasta dishes.
- Adjust seasoning according to taste preference.
- Milk can be substituted with cream for a richer soup or with a milk alternative for a lighter version.
