Ingredients

Chicken and Vegetables

  • 500 g boneless, skinless chicken breast, thinly sliced
  • 1 red bell pepper, sliced
  • 1 cup shredded cabbage
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 3 green onions, sliced
  • 3 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp vegetable oil

Noodles

  • 300 g lo mein or egg noodles

Sauce

  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1/2 tsp black pepper


Instructions

  1. Cook noodles: Prepare the lo mein or egg noodles according to the package instructions. Once cooked, drain them thoroughly and set aside to prevent overcooking.
  2. Make sauce: In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, rice vinegar, honey, and black pepper until evenly combined.
  3. Stir-fry chicken: Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the thinly sliced chicken breast and stir-fry for 4–5 minutes until it’s fully cooked and no longer pink inside. Remove chicken from the wok and set aside to keep warm.
  4. Sauté aromatics and vegetables: In the same wok, add the remaining tablespoon of oil along with minced garlic and grated ginger. Stir-fry briefly until fragrant, about 30 seconds. Then add the sliced red bell pepper, shredded cabbage, julienned carrot, and broccoli florets, cooking for 3–4 minutes until vegetables are crisp-tender.
  5. Combine chicken and noodles: Return the cooked chicken to the wok with the vegetables. Add the cooked noodles and pour the prepared sauce over everything.
  6. Toss and heat through: Toss the entire mixture over high heat for 2–3 minutes, ensuring the sauce evenly coats the chicken, noodles, and vegetables, and everything is heated through thoroughly.
  7. Garnish and serve: Remove from heat and garnish with sliced green onions before serving immediately for the best flavor and texture.

  • If lo mein noodles are unavailable, substitute with spaghetti or ramen noodles.
  • Add mushrooms, snow peas, or bok choy for additional vegetables and texture.
