Description

This homemade Poke Bowl is a vibrant and healthy meal featuring sushi rice, fresh sushi-grade ahi tuna marinated in a flavorful poke sauce, and topped with fresh vegetables like avocado, cucumber, shredded carrots, edamame, green onions, and garnished with sesame seeds and nori. It’s an easy-to-prepare bowl that captures the authentic taste of Hawaiian and Japanese-inspired cuisine, perfect for lunch or dinner and easily customizable with your favorite toppings.

Ingredients

For the Bowl:

  • 2 cups cooked sushi or short-grain rice
  • 12 oz sushi-grade ahi tuna, cut into cubes
  • 1 avocado, sliced
  • ½ cucumber, thinly sliced
  • ½ cup shredded carrots
  • ½ cup shelled edamame
  • ¼ cup green onions, sliced
  • 2 tbsp sesame seeds
  • 1 sheet nori, cut into thin strips

For the Poke Sauce:

  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 1 tsp grated fresh ginger
  • 1 tsp sriracha (optional)
  • 1 tsp lime juice

For Serving:

  • Spicy mayo
  • Pickled ginger
  • Extra sliced green onions
  • Furikake seasoning (optional)

Instructions

  1. Prepare the Rice: Cook the sushi or short-grain rice according to the package directions and allow it to cool slightly to room temperature.
  2. Make the Poke Sauce: In a bowl, whisk together the low-sodium soy sauce, sesame oil, rice vinegar, honey, grated fresh ginger, sriracha (if using), and lime juice until well combined.
  3. Marinate the Tuna: Add the cubed sushi-grade ahi tuna to the poke sauce and gently toss to coat the pieces evenly. Refrigerate this mixture for 10 to 15 minutes to let the flavors meld.
  4. Assemble the Bowl: Divide the prepared rice evenly between serving bowls. Arrange the marinated tuna, sliced avocado, thinly sliced cucumber, shredded carrots, shelled edamame, and sliced green onions attractively over the rice.
  5. Garnish and Serve: Sprinkle the bowls with sesame seeds and nori strips. Drizzle with spicy mayo and, if desired, sprinkle furikake seasoning on top. Serve immediately for the freshest taste and best texture.

Notes

  • Use only properly handled sushi-grade fish from a trusted source to ensure safety and quality.
  • Salmon is an excellent substitute for tuna if preferred.
  • For those who prefer cooked seafood, substitute raw fish with cooked shrimp or cooked salmon.
  • Additional toppings like mango, pineapple, seaweed salad, or crispy onions can be added for more flavor and texture variety.
  • Assemble the poke bowl just before serving to maintain the freshness and texture of all ingredients.
