Description

Soft and chewy oatmeal bars layered with almond butter and sweet strawberries—packed with protein and perfect for meal prep, breakfast, or a nutritious snack.

Ingredients

Main Ingredients

  • 2 cups rolled oats
  • 1/2 cup almond butter
  • 1/3 cup honey or maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Fruit Layer

  • 1/2 cup mashed strawberries or strawberry jam

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) and line a baking pan with parchment paper or lightly grease it to prevent sticking.
  2. Mix Dry and Wet Ingredients: In a large bowl, combine the rolled oats, almond butter, honey (or maple syrup), vanilla extract, cinnamon, and salt. Stir thoroughly until the mixture is well combined and sticky.
  3. Form Bottom Layer: Press half of the oat mixture firmly and evenly into the bottom of the prepared baking pan to create a solid base layer.
  4. Add Strawberry Layer: Spread the mashed strawberries or strawberry jam evenly over the bottom oat layer, ensuring full coverage for consistent flavor in every bite.
  5. Top Layer: Add the remaining oat mixture on top of the strawberry layer, pressing gently to spread it evenly.
  6. Bake: Place the pan in the preheated oven and bake for 20 to 25 minutes or until the top is golden brown and the bars are set.
  7. Cool and Slice: Remove from oven and allow the bars to cool completely in the pan before slicing into 8 to 10 bars to maintain structure.

Notes

  • Add a scoop of protein powder to the oat mixture for an extra protein boost.
  • Use either fresh or frozen strawberries depending on availability and preference.
  • Store bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
