Ingredients

  • 2 cups baby potatoes, diced

Instructions

  3. Sauté vegetables: Add the diced onion and red bell pepper to the skillet and cook for an additional 4 minutes until softened.
  4. Add garlic and chickpeas: Stir in the minced garlic and drained chickpeas, distributing evenly through the skillet.
  5. Season the hash: Sprinkle in smoked paprika, ground cumin, garlic powder, salt, and black pepper, then stir to coat all ingredients evenly with the spices.
  6. Crisp the chickpeas: Continue cooking for another 5 minutes, stirring occasionally, until the chickpeas become lightly crispy and the flavors meld together.
  7. Garnish and serve: Remove from heat, garnish with freshly chopped parsley, and optionally top with fried or poached eggs before serving.
