Chicken and Broth

Instructions

  1. Sauté Aromatics: Heat 1 tablespoon of olive oil in a large pot over medium heat. Add chopped onion, minced garlic, and diced carrot. Cook, stirring occasionally, until the vegetables soften and become fragrant, about 5 minutes.
  2. Add Chicken and Broth: Place the 2 chicken breasts into the pot with the sautéed vegetables. Pour in 6 cups of chicken broth, then increase the heat to bring the mixture to a boil.
  3. Simmer Chicken: Once boiling, reduce the heat to low and let it simmer uncovered until the chicken is thoroughly cooked and tender, approximately 15 to 20 minutes.
  4. Shred Chicken: Remove the chicken breasts from the pot and shred them into bite-sized pieces using two forks. Return the shredded chicken back into the pot.
  5. Add Chickpeas and Spices: Stir in the drained and rinsed chickpeas, 1 teaspoon cumin, and 1/2 teaspoon paprika. Mix well to combine all flavors.
