Healthy Peanut Butter Cups are a no-bake, better-for-you version of the classic treat. Made with natural peanut butter, coconut oil, and maple syrup, these cups are rich, chocolatey, naturally sweetened, and perfect as a quick snack or dessert.
Ingredients
Peanut Butter Layer
- ½ cup natural peanut butter
- 2 tbsp maple syrup or honey
- 2 tbsp coconut oil, melted
- ½ tsp vanilla extract
- Pinch of salt
Chocolate Layer
- 1 cup dark chocolate chips (70% or higher)
- 1 tbsp coconut oil
Instructions
- Prepare the mold: Line a muffin tin with paper liners or use a silicone mold to make removing the cups easier.
- Mix peanut butter layer: In a bowl, thoroughly mix the natural peanut butter, maple syrup, melted coconut oil, vanilla extract, and pinch of salt until the mixture is smooth and well combined.
- Melt chocolate: Place the dark chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring after each, until the chocolate is completely melted and smooth.
- Create chocolate base: Spoon about 1 tablespoon of the melted chocolate into each paper liner. Spread evenly to cover the bottom.
- Freeze to set base: Place the tray in the freezer for 5 minutes to allow the chocolate base to firm up.
- Add peanut butter layer: Spoon 1 tablespoon of the prepared peanut butter mixture on top of each chocolate base, spreading gently.
- Top with chocolate layer: Spoon the remaining melted chocolate over the peanut butter layer, covering it completely.
- Freeze to set completely: Freeze the cups for 15 to 20 minutes or until fully set and firm.
- Store and serve: Remove the peanut butter cups from the molds and store them chilled in the refrigerator or freezer. Allow cups to sit at room temperature for 2–3 minutes before eating for the best texture.
