Description

Soft, fluffy muffins made with fresh apples, cinnamon, and wholesome oats — a cozy, nutrient-rich breakfast or snack perfect for a healthy start to your day.

Ingredients

Dry Ingredients

  • 1 ½ cups oat flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp nutmeg

Wet Ingredients

  • 2 eggs
  • ¼ cup maple syrup
  • ½ cup applesauce

Add-ins

  • 1 apple, diced

Instructions

  1. Preheat Oven: Set your oven to 350 °F (175 °C) to warm up while you prepare the muffin batter.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the oat flour, baking powder, cinnamon, and nutmeg until evenly combined.
  3. Combine Wet Ingredients: In a separate bowl, beat the eggs, then mix in the maple syrup and applesauce until well blended.
  4. Mix Batter: Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Avoid overmixing to keep the muffins light and fluffy.
  5. Add Apples: Fold in the diced apple pieces evenly throughout the batter to distribute the fresh apple flavor.
  6. Fill Muffin Tin: Spoon the batter evenly into a greased or lined muffin tin, filling each about ¾ full to allow room for rising.
  7. Bake Muffins: Place the muffin tin in the preheated oven and bake for 18–20 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
  8. Cool and Serve: Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring to a wire rack to cool completely. Enjoy warm or at room temperature.

Notes

  • Use grated apple instead of diced for extra moisture and a softer texture.
  • Ensure not to overmix the batter to maintain the fluffiness of the muffins.
  • These muffins can be stored in an airtight container for up to 3 days or frozen for longer storage.
