Description
Hawaiian Chicken Kabob features juicy chicken, sweet pineapple, colorful bell peppers, and red onion marinated in a sweet and savory pineapple-soy glaze, then grilled to perfection. These tropical-inspired kabobs are ideal for summer cookouts and family dinners.
Ingredients
For the Kabobs
- 1½ lbs boneless, skinless chicken breasts, cut into 1½-inch cubes
- 2 cups fresh pineapple chunks
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 small red onion, cut into wedges
Marinade
- ⅓ cup pineapple juice
- ¼ cup low-sodium soy sauce
- 2 tbsp brown sugar
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 1 tsp sesame oil (optional)
- ½ tsp black pepper
Instructions
- Prepare the Marinade: Whisk together pineapple juice, soy sauce, brown sugar, olive oil, garlic, ginger, sesame oil, and black pepper in a medium bowl until sugar is dissolved and mixture is well combined.
- Marinate the Chicken: Add the chicken cubes to the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 30 minutes and up to 4 hours, allowing the flavors to infuse.
- Assemble the Kabobs: Thread the marinated chicken pieces alternately with fresh pineapple chunks, red and green bell pepper pieces, and red onion wedges onto skewers.
- Preheat the Grill: Heat the grill to medium-high heat to prepare for cooking the kabobs.
- Grill the Kabobs: Place the skewers on the grill and cook for 10–12 minutes, turning occasionally to ensure even cooking. Use a meat thermometer to confirm chicken has reached an internal temperature of 165°F (74°C).
- Serve: Remove kabobs from grill and serve immediately, ideally accompanied by rice or grilled vegetables for a complete meal.

- Soak wooden skewers in water for at least 30 minutes before threading to prevent burning on the grill.
