Bell Peppers
- 4 large bell peppers, tops removed and seeds discarded
Filling

- 1 lb ground turkey

- 1/2 teaspoon paprika
- Salt and black pepper, to taste
- 1 cup cooked rice (white or brown)
- 1 can (14.5 oz) diced tomatoes, drained

- Fresh parsley, chopped (optional)
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C) to prepare for baking the stuffed peppers.
- Prepare Peppers: Lightly grease a baking dish and arrange the bell peppers cut-side up inside the dish to hold the filling.
- Cook Turkey: Heat olive oil in a skillet over medium heat. Add ground turkey and cook until browned, breaking it apart as it cooks.
- Sauté Onion and Seasonings: Add diced onion and cook until softened, then stir in minced garlic, Italian seasoning, paprika, salt, and black pepper to infuse flavor.
- Add Rice and Tomatoes: Stir in the cooked rice and drained diced tomatoes to the turkey mixture, mixing until well combined.
- Stuff Peppers: Spoon the turkey and rice mixture evenly into each prepared bell pepper, filling them to the top.
- Bake Covered: Cover the baking dish loosely with foil and bake for 30 minutes to cook the peppers and meld the flavors.
- Add Cheese and Continue Baking: Remove the foil, sprinkle shredded mozzarella or cheddar cheese on top of each stuffed pepper, then bake an additional 10–15 minutes until the cheese is melted and the peppers are tender.
- Garnish and Serve: Garnish the stuffed peppers with fresh chopped parsley if desired before serving for a fresh finish.
