Ingredients
Meat & Vegetables
- 1 lb ground beef
- 1 small onion, diced
Seasonings & Sauces
- 1 tbsp olive oil
- 1 tbsp taco seasoning
- ½ cup salsa
Dairy & Bread
- 2 cups shredded cheddar or Mexican-blend cheese
- 4 large flour tortillas
For Serving
- Sour cream
- Salsa
Instructions
- Heat the Oil: Place a skillet over medium heat and add 1 tablespoon of olive oil, allowing it to warm up for a minute.
- Sauté Onion: Add the diced onion to the skillet and cook until softened and translucent, about 3 minutes, stirring occasionally.
- Cook Ground Beef: Add the ground beef to the skillet, breaking it apart with a spatula, and cook until it’s thoroughly browned and no longer pink.
- Season the Beef: Stir in 1 tablespoon of taco seasoning and ½ cup of salsa into the beef mixture. Let it cook together for 2 to 3 minutes so the flavors meld and the mixture thickens slightly.
- Prepare Tortilla: Heat a clean skillet over medium heat and place one large flour tortilla flat in the pan.
- Add Cheese and Beef Filling: Sprinkle about half of the cheese evenly over one half of the tortilla, then spoon the seasoned beef mixture on top, and finish with the remaining cheese over the beef.
- Fold and Cook Quesadilla: Fold the tortilla over the filling to create a half-moon shape. Cook for 2 to 3 minutes on each side until the tortilla is golden brown and crispy and the cheese inside has melted.
- Repeat for Remaining Tortillas: Remove the finished quesadilla to a plate, then repeat the process with the other tortillas and remaining ingredients.
- Serve: Slice each quesadilla into wedges and serve warm accompanied by sour cream and extra salsa for dipping.
Notes
- Add diced jalapeños to the beef mixture for a spicy kick.
- Substitute ground turkey for leaner protein.
- Serve with guacamole for extra creamy flavor.
