Dressing & Garnish
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon minced garlic
- Salt and black pepper, to taste
- Fresh parsley, chopped
Instructions
- Preheat Grill: Preheat a grill to medium-high heat to ensure a hot cooking surface for perfectly grilled squid.
- Prepare Squid: Toss the cleaned squid with half of the olive oil, minced garlic, salt, and black pepper to season evenly.
- Grill Squid: Grill the squid for 2–3 minutes on each side until just cooked through and tender, ensuring not to overcook.
- Arrange Salad: On a serving platter, arrange the mixed greens, sliced cucumber, halved cherry tomatoes, and thinly sliced red onion to create a fresh bed for the squid.
- Slice & Add Squid: Slice the grilled squid into rings or strips and place over the arranged salad greens and vegetables.
- Dress Salad: Drizzle the remaining olive oil and lemon juice over the salad and squid to add brightness and flavor.
- Garnish & Serve: Garnish with freshly chopped parsley and serve immediately for the best taste and texture.
