Description

A fresh and vibrant grilled shrimp salad combining succulent grilled shrimp with crisp mixed greens, refreshing cucumber, sweet cherry tomatoes, creamy avocado, and a zesty lemon-garlic dressing. Perfect for a light, healthy meal with Mediterranean-inspired flavors.

Ingredients

Shrimp and Salad

  • 500 g large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • Salt and black pepper, to taste
  • 5 cups mixed greens
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/4 red onion, thinly sliced
  • 2 tbsp fresh parsley, chopped

Dressing

  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 garlic clove, minced
  • Salt and black pepper, to taste

Instructions

  1. Season the Shrimp: In a bowl, toss the peeled and deveined shrimp with olive oil, minced garlic, paprika, dried oregano, salt, and black pepper until evenly coated, ensuring full flavor absorption.
  2. Preheat the Grill: Heat your grill to medium-high temperature, preparing it to perfectly cook the shrimp for the best texture and taste.
  3. Grill the Shrimp: Place the seasoned shrimp on the grill and cook for 2–3 minutes per side until they turn opaque and firm, indicating they are cooked through without being overdone.
  4. Prepare the Salad Base: Arrange the mixed greens, sliced cucumber, halved cherry tomatoes, sliced avocado, and thinly sliced red onion attractively on a large serving platter as the salad foundation.
  5. Make the Dressing: In a small bowl, whisk together extra virgin olive oil, fresh lemon juice, Dijon mustard, honey, minced garlic, salt, and black pepper until the dressing emulsifies into a smooth, tangy sauce.
  6. Assemble the Salad: Lay the grilled shrimp evenly on top of the arranged salad vegetables for a beautiful and appetizing presentation.
  7. Dress and Garnish: Drizzle the prepared lemon-garlic dressing over the shrimp and salad, then garnish with freshly chopped parsley for a burst of color and freshness. Serve immediately to enjoy the best texture and flavors.

Notes

  • Do not overcook the shrimp; they should be firm and opaque to ensure tenderness and juiciness.
  • Enhance the salad by adding crumbled feta cheese or grilled corn for extra flavor and texture.
  • Serve with toasted pita bread or crusty bread to make the meal more filling and satisfying.
