Description

A beautiful summer salad featuring juicy grilled peaches, creamy burrata cheese, fresh peppery arugula, toasted nuts, and a sweet balsamic glaze drizzle. This salad combines sweet, savory, and creamy flavors for a refreshing and elegant dish perfect for warm weather meals or entertaining.


Ingredients

Fruit and Cheese

  • 3 ripe peaches, halved and pitted
  • 2 balls burrata cheese

Greens and Nuts

  • 5 cups arugula
  • ¼ cup toasted pecans or walnuts

Dressing and Seasoning

  • 2 tbsp olive oil
  • 2 tbsp balsamic glaze
  • Fresh basil leaves, for garnish
  • Salt and black pepper, to taste


Instructions

  1. Preheat the grill. Set your grill or grill pan to medium-high heat to prepare it for cooking the peaches.
  2. Brush the peaches with olive oil. Lightly coat the peach halves with olive oil to prevent sticking and help them char beautifully on the grill.
  3. Grill the peaches. Place the peach halves cut-side down on the grill. Grill for 2–3 minutes per side until they develop light grill marks and soften slightly.
  4. Arrange the arugula. Spread the fresh arugula evenly on a serving platter to form the salad base.
  5. Add grilled peaches and burrata. Place the warm grilled peaches on top of the arugula, then tear or slice the burrata cheese and distribute it evenly over the salad.
  6. Top with nuts and basil. Sprinkle toasted pecans or walnuts and fresh basil leaves over the salad for texture and fragrance.
  7. Drizzle with balsamic glaze and season. Finish by drizzling the balsamic glaze and seasoning the salad with salt and freshly cracked black pepper. Serve immediately for the best flavor and texture.

Notes

  • If peaches are unavailable, nectarines make a great substitute and provide a similar sweetness.
  • For a heartier appetizer, add slices of prosciutto to the salad for a savory contrast.
