Description

This Grilled Peach Salad combines sweet caramelized peaches, crisp mixed greens, creamy goat cheese, toasted nuts, and a tangy balsamic vinaigrette for a refreshing and elegant summer dish that’s quick and easy to prepare.

Ingredients

Salad

  • 3 ripe peaches, halved and pitted
  • 1 tbsp olive oil
  • 5 cups mixed greens
  • 1/3 cup crumbled goat cheese or feta cheese
  • 1/4 cup toasted pecans or walnuts
  • 1/4 small red onion, thinly sliced

Dressing

  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and black pepper to taste

Instructions

  1. Preheat the grill: Set your grill to medium heat to prepare for cooking the peaches. This ensures even caramelization without burning.
  2. Prepare the peaches: Brush the peach halves lightly with 1 tablespoon of olive oil to prevent sticking and help them caramelize beautifully on the grill.
  3. Grill the peaches: Place the peaches cut side down on the grill and cook for 2 to 3 minutes per side until distinct grill marks form and the peaches soften slightly.
  4. Slice the grilled peaches: Allow the peaches to cool slightly after grilling, then slice them for easier serving and integration into the salad.
  5. Assemble the salad: Arrange the mixed greens neatly on a serving platter or bowl, then top with the grilled peach slices, crumbled goat cheese, toasted nuts, and thinly sliced red onion.
  6. Make the dressing: In a small bowl, whisk together 3 tablespoons olive oil, 1 tablespoon balsamic vinegar, 1 teaspoon honey, salt, and black pepper until well combined.
  7. Dress and serve: Drizzle the vinaigrette over the salad just before serving to keep the greens crisp and fresh. Serve immediately for the best texture and flavor.

Notes

  • Nectarines can be substituted for peaches if preferred.
  • Add grilled chicken to the salad for a more filling, protein-rich meal.
  • Toasting the nuts enhances their flavor and adds a satisfying crunch to the salad.
