Description
Perfectly grilled filet mignon seasoned simply and cooked over high heat for a beautifully seared crust and tender, juicy center. This classic American steak recipe is straightforward yet delivers restaurant-quality flavor and tenderness, ideal for a special dinner or weekend grilling.
Ingredients
Steaks
- 4 filet mignon steaks, about 200–250 g each
Seasoning
- 2 tbsp olive oil
- 2 tsp kosher salt
- 1 tsp freshly ground black pepper
- 1 tsp garlic powder
Finishing
- 1 tbsp butter
- 2 garlic cloves, lightly crushed
- 2 sprigs fresh rosemary or thyme
Instructions
- Prepare the steaks: Remove the steaks from the refrigerator 30–45 minutes before grilling to allow them to come to room temperature for even cooking.
- Dry and season: Pat the steaks dry thoroughly with paper towels to help achieve a good sear. Rub each steak with olive oil and season generously on all sides with kosher salt, freshly ground black pepper, and garlic powder.
- Preheat the grill: Heat your grill to high heat to ensure a hot surface that will sear the steaks and lock in juices.
- Grill the steaks: Place the steaks on the hot grill and cook for about 3–5 minutes per side, adjusting time based on thickness and desired doneness. Avoid pressing down on the steaks during grilling to keep them juicy.
- Butter baste and add aromatics: In the final minute of grilling, add butter, lightly crushed garlic cloves, and fresh rosemary or thyme to the grill or use them to baste the steaks for added flavor and moisture.
- Rest the steaks: Transfer the cooked steaks to a plate and let them rest for 5–10 minutes. This allows the juices to redistribute, resulting in a tender and succulent steak.
- Serve: Serve immediately with your choice of roasted vegetables, potatoes, or a fresh salad for a complete meal.
Notes
- Use a meat thermometer for the most accurate doneness: 125°F for rare, 135°F for medium-rare, 145°F for medium.
- Avoid pressing down on the steaks while grilling to prevent juices from escaping.
- Letting the meat rest after grilling helps retain its juices and improves tenderness.
