Description

A vibrant Green Goddess Salad loaded with crisp cabbage, cucumbers, green onions, and fresh herbs, tossed in a creamy Green Goddess dressing. Perfect as a healthy side dish, light lunch, or meal-prep salad.

Ingredients

Salad

  • 3 cups green cabbage, finely chopped
  • 2 cups romaine lettuce, chopped
  • 1 cucumber, diced
  • 3 green onions, sliced
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh chives, chopped
  • ¼ cup roasted sunflower seeds

Green Goddess Dressing

  • ½ cup plain Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 garlic clove
  • 2 tbsp fresh basil
  • 2 tbsp fresh parsley
  • Salt and black pepper, to taste

Instructions

  1. Prepare the Vegetables: Combine the finely chopped green cabbage, chopped romaine lettuce, diced cucumber, sliced green onions, chopped fresh parsley, chopped fresh chives, and roasted sunflower seeds in a large mixing bowl.
  2. Make the Dressing: In a blender or food processor, blend the plain Greek yogurt, olive oil, lemon juice, garlic clove, fresh basil, fresh parsley, salt, and black pepper until the dressing is smooth and creamy.
  3. Toss Salad with Dressing: Pour the freshly made Green Goddess dressing over the mixed salad ingredients in the bowl. Toss everything gently and thoroughly to coat the salad evenly with the creamy dressing.
  4. Serve or Chill: Serve the salad immediately for a crisp, fresh taste, or place it in the refrigerator to chill for about 15 minutes to allow the flavors to meld.

Notes

  • Add grilled chicken or chickpeas to the salad for an extra boost of protein, making it more filling.
  • If preparing the salad ahead of time, store the Green Goddess dressing separately to prevent the salad from becoming soggy.
