Description

This Green Goddess Chickpea Power Bowl is a vibrant, nutrient-packed meal featuring crunchy vegetables, creamy avocado, protein-rich chickpeas, and fresh herbs. Topped with a bright, homemade Green Goddess dressing made from Greek yogurt and fresh herbs, it offers a fresh, satisfying vegetarian option perfect for lunch or meal prep.

Ingredients

Power Bowl Ingredients

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 3 cups cooked quinoa or brown rice
  • 2 cups chopped romaine lettuce
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • ½ cup shredded carrots
  • ¼ cup red onion, thinly sliced
  • ¼ cup pumpkin seeds or sunflower seeds
  • 2 tbsp fresh parsley, chopped

Green Goddess Dressing

  • ½ cup Greek yogurt
  • ¼ cup fresh parsley
  • ¼ cup fresh cilantro
  • 2 tbsp fresh basil
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 small garlic clove
  • 1 tsp honey or maple syrup
  • 2–3 tbsp water, as needed
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Prepare the Dressing: Add Greek yogurt, fresh parsley, cilantro, basil, lemon juice, olive oil, garlic, honey or maple syrup, salt, and pepper to a blender. Blend until smooth, adding water one tablespoon at a time until the dressing achieves your desired consistency.
  2. Assemble the Bowls: Divide the cooked quinoa or brown rice evenly among four bowls. Arrange the drained chickpeas, chopped romaine lettuce, diced cucumber, halved cherry tomatoes, diced avocado, shredded carrots, and thinly sliced red onion over the grains.
  3. Add Dressing and Garnish: Drizzle each bowl generously with the prepared Green Goddess dressing. Sprinkle pumpkin seeds and chopped fresh parsley on top for extra crunch and flavor before serving.

Notes

  • Substitute kale or spinach for romaine lettuce to add extra greens.
  • Add grilled chicken, salmon, or tofu for additional protein.
  • For a vegan version, use dairy-free yogurt and replace honey with maple syrup.
  • When meal prepping, keep the dressing separate to maintain freshness.
  • Consider using roasted chickpeas instead of regular chickpeas for extra crunch.
