Ingredients

Wet Ingredients

  • ½ cup vanilla protein powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat and prepare muffin tin: Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with liners or grease it lightly.
  2. Mix wet ingredients: In a medium bowl, whisk together the Greek yogurt, eggs, honey (or maple syrup), and vanilla extract until smooth and fully combined.
  3. Combine dry ingredients: In a separate large bowl, whisk together the oat flour, vanilla protein powder, baking powder, baking soda, cinnamon, and salt to evenly distribute all the leavening and spices.
  4. Fold dry into wet: Gradually fold the dry ingredients into the wet ingredients, mixing gently until just combined to avoid overmixing and keeping the muffins tender.
  5. Add optional ingredients: Gently stir in blueberries or chocolate chips if using, folding them evenly throughout the batter.
  6. Fill muffin cups: Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full to allow room for rising.
