Ingredients
Potatoes
- 2 lbs russet potatoes
Seasoning
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Toppings
- ½ cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped (optional)
- 1 lemon, cut into wedges
Serving
- Tzatziki, for serving
Instructions
- Preheat the oven: Set your oven to 425°F (220°C) and line a large baking sheet with parchment paper to prepare for baking the fries.
- Prep the potatoes: Wash and cut the potatoes into thin, even fries to ensure uniform cooking.
- Soak the potatoes: Place the cut potatoes in cold water and soak for 20–30 minutes. This step removes excess starch, promoting crispiness.
- Dry the potatoes: Drain the water and thoroughly dry the potatoes using a clean kitchen towel to avoid soggy fries.
- Season the fries: Toss the dried potatoes with olive oil, dried oregano, paprika, salt, and black pepper until evenly coated.
- Arrange and bake: Spread the fries out in a single layer on the prepared baking sheet, making sure they aren’t crowded. Bake for 35–45 minutes, flipping halfway through for even browning.
- Add toppings: Once golden and crispy, transfer the fries to a serving platter. Sprinkle with crumbled feta, chopped parsley, and optional dill for fresh flavor.
- Finish and serve: Squeeze fresh lemon juice over the fries and serve immediately with tzatziki on the side for dipping.
Notes
- Drying the potatoes thoroughly after soaking is essential to achieve crispy fries.
- Do not overcrowd the baking sheet; use two pans if necessary to allow proper air circulation.
- For extra crispy fries, you can place the baking sheet in the oven while it preheats.
- Add Kalamata olives or thinly sliced red onion to enhance the Mediterranean flavor profile.
- Serve immediately for the best texture and taste experience.
