Description

A fresh and vibrant Greek Chicken Salad featuring grilled chicken breasts paired with crisp cucumber, sweet cherry tomatoes, sharp red onion, salty olives, and creamy feta cheese, all tossed in a simple lemon and olive oil dressing for a classic Mediterranean flavor.

Ingredients

Chicken

  • 2 chicken breasts

Vegetables & Cheese

  • 1 cucumber, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/3 cup feta cheese, crumbled
  • 1/4 cup kalamata olives

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Season and Grill Chicken: Season the chicken breasts with salt and pepper on both sides. Preheat a grill or grill pan to medium-high heat. Grill the chicken for about 6-7 minutes per side or until fully cooked and juices run clear. Remove from grill and let rest for 5 minutes.
  2. Prepare Vegetables and Cheese: While the chicken is grilling, chop the cucumber, halve the cherry tomatoes, thinly slice the red onion, and crumble the feta cheese. Place them along with the olives into a large salad bowl.
  3. Make Dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined to create a bright and tangy dressing.
  4. Toss Salad: Pour the dressing over the vegetable and feta mixture, tossing gently to coat all ingredients evenly.
  5. Assemble and Serve: Slice the rested grilled chicken into strips and arrange on top of the salad. Serve immediately for the freshest taste.

Notes

  • Use Kalamata olives for an authentic Greek flavor.
  • Optional: Add dried or fresh oregano to the dressing for an extra Mediterranean touch.
  • Best served fresh to enjoy the crispness of the vegetables and flavor of the grilled chicken.
