Ingredients

For the Marinade

  • ¼ cup extra-virgin olive oil
  • Juice of 2 lemons
  • 4 garlic cloves, minced
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper

For the Kabobs

  • 2 lbs (900 g) boneless, skinless chicken breasts, cut into 1½-inch cubes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 zucchini, sliced into thick rounds
  • Wooden or metal skewers
  • Fresh parsley and lemon wedges for serving


Instructions

  1. Prepare the Marinade: Whisk together the olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and pepper in a bowl until well combined.
  2. Marinate the Chicken: Place the cubed chicken in the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes or up to 8 hours to allow the flavors to infuse.
  3. Assemble the Kabobs: Thread the marinated chicken cubes, red bell pepper chunks, yellow bell pepper chunks, red onion chunks, and zucchini slices alternately onto the skewers, distributing ingredients evenly.
  4. Preheat the Grill: Heat the grill to medium-high heat to prepare for cooking.
  5. Grill the Kabobs: Place the skewers on the grill and cook for 12–15 minutes, turning every few minutes to ensure even cooking. Grill until the chicken reaches an internal temperature of 165°F (74°C).
  6. Serve: Remove the kabobs from the grill, garnish with fresh parsley, and serve with lemon wedges for added zest.
