Ingredients
Beef:
- 1 lb beef sirloin or tenderloin, thinly sliced into strips
Seasoning:
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1 onion, finely sliced
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced (button or cremini)
- 1 tbsp Dijon mustard
- ½ cup beef stock
- ½ cup sour cream or crème fraîche
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
- Cooked egg noodles, rice, or mashed potatoes, for serving
Instructions
- Season beef strips: Lightly season beef strips with salt and pepper.
- Sear beef: Heat olive oil in a large skillet. Sear beef in batches for 1–2 minutes until browned. Remove and set aside.
- Sauté onions and garlic: Add butter to skillet, sauté onions until softened. Add garlic and cook for 1 minute.
- Cook mushrooms: Add mushrooms and cook until golden brown.
- Add seasonings: Stir in Dijon mustard, Worcestershire sauce, paprika, and beef stock. Simmer for 5 minutes.
- Finish the sauce: Lower heat, stir in sour cream until creamy.
- Combine beef and sauce: Return beef to skillet, warm through without overcooking.
- Garnish and serve: Garnish with parsley, serve over noodles, rice, or potatoes.
