Description

A fresh and vibrant arugula salad featuring sweet strawberries, creamy goat cheese, crunchy nuts, and a light balsamic dressing. Ideal for a healthy lunch, side dish, or an elegant dinner salad that is both flavorful and nutritious.

Ingredients

Salad

  • 5 cups arugula
  • 1½ cups strawberries, sliced
  • ½ cup goat cheese, crumbled
  • ¼ cup walnuts or pecans, chopped
  • ¼ red onion, thinly sliced

Dressing

  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and black pepper, to taste

Instructions

  1. Prepare the salad ingredients: In a large bowl, combine the arugula, sliced strawberries, crumbled goat cheese, chopped walnuts or pecans, and thinly sliced red onion. Gently mix to distribute the ingredients evenly.
  2. Make the dressing: In a small bowl, whisk together olive oil, balsamic vinegar, honey, and a pinch of salt and black pepper until well combined and emulsified to form a light dressing.
  3. Toss the salad: Drizzle the prepared dressing over the salad ingredients. Toss gently to coat the salad evenly without bruising the delicate arugula and strawberries.
  4. Serve immediately: Transfer the tossed salad to serving plates or a bowl and serve right away to enjoy the fresh flavors and textures at their best.

Notes

  • Add grilled chicken to the salad to increase the protein content and make it a more substantial meal.
  • If preferred, use spinach instead of arugula for a milder leafy green alternative.
