Description

This glazed corned beef recipe features a tender corned beef brisket simmered to perfection and then baked with a sweet and tangy glaze made from brown sugar, Dijon mustard, honey, and apple cider vinegar. The result is a caramelized, flavorful main dish perfect for St. Patrick’s Day or any hearty meal.

Ingredients

Corned Beef

  • 1 (3–4 lb) corned beef brisket with spice packet
  • Water, enough to cover

Glaze

  • ¼ cup brown sugar
  • 2 tbsp Dijon mustard
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar

Instructions

  1. Simmer the Corned Beef: Place the corned beef brisket along with the included spice packet into a large pot. Cover the meat completely with water. Bring the water to a boil over high heat, then reduce the heat to low and simmer gently for 2½ to 3 hours, or until the brisket is tender and easily pierced with a fork.
  2. Preheat the Oven: About 15 minutes before the corned beef is done simmering, preheat your oven to 375°F (190°C) to prepare for glazing and baking.
  3. Transfer to Baking Dish: Carefully remove the cooked brisket from the pot and place it into a baking dish suitable for the oven.
  4. Prepare the Glaze: In a small bowl, whisk together the brown sugar, Dijon mustard, honey, and apple cider vinegar until smooth and well combined to form a sweet and tangy glaze.
  5. Apply the Glaze: Spread the glaze evenly over the top and sides of the brisket, ensuring full coverage for caramelization during baking.
  6. Bake and Caramelize: Place the glazed brisket in the preheated oven and bake for 20 to 25 minutes. Halfway through baking, baste the meat with the drippings or additional glaze to enhance flavor and glaze thickness.
  7. Rest the Meat: After baking, remove the brisket from the oven and let it rest for 10 minutes. This resting period allows juices to redistribute, making the meat moist and tender when sliced.

Notes

  • For a keto-friendly option, substitute the brown sugar and honey with a keto-approved sweetener such as erythritol or monk fruit.
  • Serve the glazed corned beef alongside traditional sides like cabbage, roasted vegetables, or mashed potatoes for a complete meal.
