Ingredients

Ground Beef:

1 lb

Olive Oil:

2 tbsp

Onion, diced:

1 small

Garlic, minced:

2 cloves

Zucchini, diced:

1 medium

Yellow Squash, diced:

1 medium

Red Bell Pepper, diced:

Cherry Tomatoes, halved:

1 cup

Corn Kernels:

1 cup

Green Beans, chopped:

1 cup

Italian Seasoning:

1 tsp

Paprika:

1/2 tsp

Salt:

1/2 tsp (adjust to taste)

Black Pepper:

1/4 tsp

Parmesan Cheese, grated (optional):

1/4 cup

Fresh Parsley or Basil, chopped (for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
  2. Add onion and garlic, cooking until softened and fragrant (2–3 minutes).
  3. Stir in zucchini, squash, bell pepper, green beans, and corn. Cook for 6–8 minutes, stirring occasionally, until vegetables are tender.
  4. Add cherry tomatoes, Italian seasoning, paprika, salt, and pepper. Stir and cook another 2–3 minutes until tomatoes soften.
  5. Sprinkle with Parmesan (if using) and garnish with fresh parsley or basil before serving.
