Yellow Squash, diced:

Red Bell Pepper, diced:

Cherry Tomatoes, halved:

Corn Kernels:
1 cup
Green Beans, chopped:
1 cup
Italian Seasoning:
1 tsp
Paprika:
1/2 tsp
Salt:
1/2 tsp (adjust to taste)
Black Pepper:
1/4 tsp
Parmesan Cheese, grated (optional):
1/4 cup
Fresh Parsley or Basil, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
 - Add onion and garlic, cooking until softened and fragrant (2–3 minutes).
 - Stir in zucchini, squash, bell pepper, green beans, and corn. Cook for 6–8 minutes, stirring occasionally, until vegetables are tender.
 - Add cherry tomatoes, Italian seasoning, paprika, salt, and pepper. Stir and cook another 2–3 minutes until tomatoes soften.
 - Sprinkle with Parmesan (if using) and garnish with fresh parsley or basil before serving.

- Swap in whatever veggies you have on hand (mushrooms, carrots, or spinach work great).
 - Serve over rice, quinoa, or pasta for a heartier meal.
 - For a spicier version, add red pepper flakes or a dash of hot sauce.
