Description
Fresh Tomato Bruschetta Pasta combines juicy ripe tomatoes, minced garlic, fresh basil, grated Parmesan cheese, and tender spaghetti tossed in a light olive oil and balsamic vinegar dressing. Inspired by classic Italian bruschetta, this dish offers a fresh and flavorful meal perfect for warm-weather dining or a quick weeknight dinner.
Ingredients
Pasta
- 12 oz spaghetti or angel hair pasta
Bruschetta Mixture
- 3 cups diced ripe tomatoes
- 3 cloves garlic, minced
- ¼ cup fresh basil, chopped
- ¼ cup olive oil
- 2 tbsp balsamic vinegar
- Salt and black pepper, to taste
Topping
- ½ cup grated Parmesan cheese
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil and cook the spaghetti or angel hair pasta according to the package directions until al dente. Drain well, reserving ¼ cup of the pasta cooking water for later use.
- Prepare the tomato mixture: In a large bowl, combine the diced ripe tomatoes, minced garlic, freshly chopped basil, olive oil, balsamic vinegar, salt, and black pepper. Stir gently to blend all the fresh flavors.
- Toss pasta with mixture: Immediately add the warm drained pasta to the bowl with the tomato mixture and toss to coat evenly. If the pasta seems too dry, gradually add the reserved pasta water to achieve a silky, cohesive texture.
- Add Parmesan and serve: Sprinkle the grated Parmesan cheese over the top and give the pasta a final gentle toss. Serve the bruschetta pasta warm or chilled according to your preference.
Notes
- Use vine-ripened tomatoes for the best flavor and freshness.
- For a heartier meal, top the pasta with grilled chicken or your choice of protein.
- This pasta dish is best enjoyed the day it’s made to savor the fresh ingredients at their peak.
