Ingredients
Meat and Seasoning
- 1.4 kg beef chuck roast
- 1 tsp salt
- ½ tsp black pepper
Vegetables and Aromatics
- 3 large yellow onions, thinly sliced
- 4 cloves garlic, minced
- 500 g baby potatoes
- 4 carrots, cut into large pieces
- 2 bay leaves
Liquids and Condiments
- 2 tbsp olive oil
- 2 tbsp butter
- 3 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
Herbs and Cheese
- 1 tsp dried thyme
- 1 tsp dried rosemary
- ½ cup Gruyère or Swiss cheese, optional
Instructions
- Preheat the oven: Set your oven to 160°C (325°F) to gently roast the pot roast ensuring tender meat.
- Season the roast: Generously season the 1.4 kg beef chuck roast with salt and black pepper on all sides to enhance flavor.
- Sear the roast: Heat 2 tablespoons olive oil in a large Dutch oven over medium-high heat. Sear the roast for 3–4 minutes per side until nicely browned, then remove and set aside.
- Caramelize onions: Reduce the heat to medium, add 2 tablespoons butter and the sliced onions. Cook for 15–20 minutes, stirring occasionally until the onions are deeply caramelized, developing that rich French onion flavor.
- Add garlic: Stir in minced garlic and cook for 30 seconds to release its aroma without burning.
- Add seasonings and liquids: Mix in 1 tablespoon Worcestershire sauce, 1 tablespoon Dijon mustard, 1 teaspoon dried thyme, and 1 teaspoon dried rosemary. Pour in 3 cups beef broth and scrape the browned bits from the bottom of the pot to deglaze and build flavor.
- Return roast and add vegetables: Place the seared roast back into the Dutch oven. Add baby potatoes, carrots, and 2 bay leaves around the roast.
- Slow roast: Cover the Dutch oven and transfer to the preheated oven. Cook for 3 to 3½ hours, or until the beef is fork-tender and vegetables are cooked through.
- Rest the roast: Remove the bay leaves. Let the roast rest in the pot uncovered for 10–15 minutes to allow the juices to redistribute.
- Serve: Serve the pot roast with the vegetables and spoon the rich onion-laden cooking juices over the top. Optionally, sprinkle with Gruyère or Swiss cheese for a melty, savory finish.
Notes
- Caramelizing the onions properly over medium heat is key to achieving the deep, sweet French onion flavor that defines this dish.
- If the liquid becomes too low during cooking, add extra beef broth or water to prevent burning and maintain moisture.
- For a thicker sauce, remove the roast and vegetables after cooking and simmer the cooking liquid uncovered on the stovetop for a few minutes until reduced to desired consistency.
- Letting the roast rest before slicing ensures maximum juiciness and tenderness.
