Description
French Chicken Casserole a la Normande is a traditional Normandy dish characterized by tender, braised chicken thighs cooked with apples, mushrooms, onions, and a rich cream sauce. The combination of apple cider and Dijon mustard creates a unique balance of sweet and savory flavors, making it a comforting and elegant main course.
Ingredients
Chicken and Seasoning
- 6 chicken thighs or drumsticks
- Salt and black pepper, to taste
Vegetables and Aromatics
- 2 tablespoons butter
- 1 onion, sliced
- 2 apples, peeled and sliced
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
Liquids and Flavorings
- 1 cup apple cider (preferably dry cider)
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon fresh thyme
- 1 tablespoon Dijon mustard
Garnish
- Fresh parsley for garnish
Instructions
- Preheat and Prepare Chicken: Preheat your oven to 350°F (175°C). Season the chicken thighs or drumsticks generously with salt and black pepper to taste.
- Brown the Chicken: Melt 2 tablespoons of butter in a large oven-safe pot or casserole dish over medium heat. Add the chicken and cook until browned on both sides, about 5-7 minutes per side. Remove the chicken and set aside.
- Sauté Vegetables: In the same pot, add the sliced onions, peeled and sliced apples, and mushrooms. Sauté until all are softened and beginning to caramelize, approximately 5-7 minutes.
- Add Garlic: Stir in the minced garlic and cook for an additional minute until fragrant.
- Deglaze and Add Liquids: Pour in 1 cup of apple cider and 1/2 cup chicken broth. Stir in 1 tablespoon Dijon mustard and 1 teaspoon fresh thyme, scraping up any browned bits from the bottom of the pot to incorporate flavor.
- Combine and Bake: Return the browned chicken pieces to the pot, nestling them into the mixture. Cover the pot with a lid or foil and bake in the preheated oven for 35 to 40 minutes, or until the chicken is fully cooked and tender.
- Finish with Cream: Remove the pot from the oven, stir in 1 cup of heavy cream, and simmer gently on the stovetop for 5 minutes to thicken the sauce slightly.
- Garnish and Serve: Garnish with fresh parsley before serving. This dish pairs wonderfully with mashed potatoes, rice, or crusty bread.
