Ingredients
For the Black Beans
- 2 cans (15 oz / 425 g each) black beans, drained and rinsed
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 teaspoon chili powder
- ½ teaspoon ground cumin
- ½ teaspoon smoked paprika
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons water
- 1 tablespoon fresh lime juice
For the Bowls
- 3 cups cooked white or brown rice
- 1 cup corn kernels
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- ½ red bell pepper, diced
- ¼ small red onion, diced
- ½ cup shredded lettuce
- ¼ cup fresh cilantro, chopped
- 1 jalapeño, sliced, optional
- ¼ cup shredded cheddar or Monterey Jack cheese, optional
For the Lime Dressing
- 3 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 1 teaspoon honey or maple syrup
- ½ teaspoon ground cumin
- ¼ teaspoon chili powder
- Salt and black pepper, to taste
Instructions
- Season the beans: Heat olive oil in a skillet over medium heat. Add minced garlic and cook for about 30 seconds until fragrant. Stir in the drained black beans along with chili powder, ground cumin, smoked paprika, salt, black pepper, and water, mixing well to combine.
- Simmer: Cook the seasoned beans for 4–5 minutes, stirring occasionally, until they are heated through and the flavors meld together. Remove from heat and stir in fresh lime juice for brightness.
- Make the dressing: In a small bowl, whisk together fresh lime juice, olive oil, honey or maple syrup, ground cumin, chili powder, and salt and pepper to taste until the dressing is well emulsified.
- Prepare the toppings: Arrange the corn kernels, halved cherry tomatoes, diced avocado, diced red bell pepper, diced red onion, shredded lettuce, chopped fresh cilantro, sliced jalapeño (if using), and shredded cheese (if using) on a platter or in separate bowls for easy assembly.
- Build the bowls: Divide the cooked rice evenly among four bowls. Spoon the seasoned black beans over the rice, then artfully arrange the prepared toppings around the beans for a colorful presentation.
- Dress: Drizzle each bowl generously with the prepared lime dressing to enhance flavor and add a zesty kick.
- Serve: Garnish bowls with extra cilantro and lime wedges if desired. Serve immediately for the freshest taste and best texture.
