Description
Tender boneless chicken breasts are seasoned with fragrant rosemary, garlic, lemon, and olive oil, then pan-seared to golden perfection for a simple, flavorful, and quick weeknight dinner that brings a Mediterranean-inspired flair to your table.
Ingredients
Chicken and Marinade
- 600 g boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp lemon juice
- 1/2 tsp lemon zest
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 1 tbsp butter
Instructions
- Season the Chicken: Pat the chicken breasts dry with paper towels to remove excess moisture. Season both sides generously with salt, black pepper, paprika, and chopped fresh rosemary to infuse flavor.
- Heat the Skillet: Place a large skillet over medium-high heat and add the olive oil. Allow the oil to heat until shimmering but not smoking, ensuring a good sear on the chicken.
- Cook the Chicken: Add the seasoned chicken breasts to the hot skillet. Cook undisturbed for 5 to 7 minutes on the first side, depending on thickness, until the underside is golden brown.
- Flip and Add Aromatics: Turn the chicken over and add the minced garlic and butter to the skillet. Allow the butter to melt and the garlic to soften, spooning the melted garlic butter over the chicken to enhance flavor.
- Add Lemon and Check Temperature: Drizzle the lemon juice over the chicken and sprinkle with lemon zest. Continue cooking the chicken for an additional 5 to 7 minutes, or until its internal temperature reaches 74°C (165°F) ensuring it is fully cooked.
- Rest the Chicken: Remove the skillet from heat and transfer the chicken to a plate. Let it rest for 5 minutes to allow the juices to redistribute, keeping the chicken moist and tender.
- Serve: Garnish with extra fresh rosemary if desired. Slice the chicken and serve immediately with your favorite sides such as roasted potatoes, green beans, or a fresh salad.
Notes
- Pound thick chicken breasts to an even thickness before cooking to ensure uniform cooking and avoid dryness.
- You can substitute chicken breasts with boneless, skinless chicken thighs for a juicier alternative.
- Pair this dish with roasted potatoes, sautéed green beans, or a crisp mixed green salad for a complete meal.
