Description

Easy Persian Koobideh Kabobs are traditional Middle Eastern skewers made from seasoned ground beef or lamb, blended with grated onions and spices, then grilled to perfection. These kabobs offer a smoky, juicy flavor and tender texture, perfect as a main dish served alongside rice or grilled vegetables.

Ingredients

Meat Mixture

  • 1 lb ground beef or lamb
  • ½ onion, finely grated and drained
  • 1 tsp turmeric
  • ½ tsp sumac (optional)
  • Salt, to taste
  • Black pepper, to taste

Other

  • Skewers (flat metal or wooden, soaked if wooden)

Instructions

  1. Prepare the Meat Mixture: In a large bowl, combine the ground meat with the finely grated and well-drained onion, turmeric, salt, pepper, and sumac if using. Mix these ingredients well to distribute the spices evenly throughout the meat.
  2. Knead the Meat: Use your hands to knead the mixture for 2 to 3 minutes until it becomes tacky and sticky, which helps the kabobs hold their shape on the skewers.
  3. Shape on Skewers: Take portions of the meat mixture and mold them around flat metal or soaked wooden skewers, pressing firmly to ensure they stick well and form flat, elongated kabobs typical of koobideh.
  4. Grill the Kabobs: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for 8 to 10 minutes, turning gently and frequently to cook evenly on all sides without breaking apart.
  5. Serve: Once cooked through and slightly charred, remove the kabobs from the grill. Serve hot with Persian rice, grilled tomatoes, or fresh herbs for an authentic experience.

Notes

  • Drain the grated onion thoroughly before mixing to reduce excess moisture and prevent the meat mixture from falling off the skewers during grilling.
  • Sumac is optional but adds a tangy, citrus flavor traditional in Persian cooking.
  • Flattening the meat on the skewers helps them cook evenly and speeds up grilling time.
  • Traditionally served with saffron rice and grilled tomatoes, which complement the rich flavors well.
  • If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
