Description

This Easy Lamb Sausage Caponata Stew is a hearty, rustic Mediterranean dish featuring flavorful lamb sausages simmered with eggplant, tomatoes, and olives in a tangy, caponata-inspired sauce. Perfect for a comforting dinner, it delivers rich and vibrant flavors with simple ingredients and easy preparation.

Ingredients

Meat

  • 6 lamb sausages, sliced

Vegetables & Aromatics

  • 1 eggplant, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced

Canned Goods & Condiments

  • 400 g canned crushed tomatoes
  • 1/4 cup olives, sliced
  • 1 tbsp red wine vinegar

Seasoning

  • Salt and black pepper, to taste

Instructions

  1. Brown the Sausages: Heat a large pot over medium heat and add the sliced lamb sausages. Cook until browned on all sides to develop a rich flavor, then remove them from the pot and set aside.
  2. Sauté Vegetables: In the same pot, add the chopped onion, minced garlic, and diced eggplant. Cook, stirring frequently, until the vegetables soften and become fragrant, about 5-7 minutes.
  3. Add Tomatoes, Olives, and Vinegar: Stir in the canned crushed tomatoes, sliced olives, and red wine vinegar to the pot. Mix well to combine all the flavors.
  4. Simmer the Stew: Return the browned lamb sausages to the pot. Reduce the heat to low, cover, and let the stew simmer gently for 30 minutes to allow the flavors to meld together and the sausages to cook through.
  5. Season and Serve: Taste the stew and adjust the seasoning with salt and black pepper as desired. Serve hot, optionally accompanied by crusty bread or creamy polenta for a complete meal.

Notes

  • Serve with crusty bread or creamy polenta to soak up the delicious sauce.
  • This stew tastes even better the next day after the flavors have had more time to develop.
