Ingredients

Beef Filling

  • 1 packet taco seasoning
  • ½ cup enchilada sauce
  • ½ cup diced onion (optional)

Assembly

  • 8 flour or corn tortillas
  • 1 cup enchilada sauce (plus more for topping)
  • 2 cups shredded Mexican-blend or cheddar cheese
  • Cooking spray


Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to prepare for baking the enchiladas.
  2. Cook the ground beef: In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it into crumbles as it cooks. Drain any excess grease to avoid a greasy dish.
  3. Season the beef: Stir in the taco seasoning and ½ cup of enchilada sauce along with the diced onion if using. Cook for a few more minutes until the mixture is well combined and heated through.
  4. Assemble the enchiladas: Lightly spray a baking dish with cooking spray. Spoon a generous amount of the beef mixture onto each tortilla, sprinkle with some shredded cheese, then roll up tightly.
  5. Arrange in baking dish: Place the rolled tortillas seam-side down in the prepared baking dish in a single layer.
  6. Add sauce and cheese: Pour the remaining enchilada sauce evenly over the top of the enchiladas, then sprinkle the remaining shredded cheese on top for a cheesy crust.
  7. Bake: Bake uncovered in the preheated oven for 25 to 30 minutes, or until the cheese is bubbly and melted and the edges of the tortillas are slightly crispy.
  8. Serve and garnish: Remove from oven and let cool slightly before serving. Top with sour cream, lettuce, tomatoes, or your preferred toppings for extra flavor.
